Ingredients:

  • 1 ripe avocado

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1 bell pepper, julienned

  • 2 tablespoons hummus

  • Fresh spinach leaves

  • Whole grain tortillas or low-carb wraps

Instructions:

1.              Mash the avocado and spread a thin layer on the tortilla or wrap.

2.              Spread hummus over the avocado.

3.              Place a few spinach leaves, cucumber, carrot, and bell pepper strips on top.

4.              Roll up the tortilla tightly and slice into bite-sized pieces.
